In the heart of Birmingham, nestled along Snow Hill Queensway, lies Trillium, a restaurant that defies the conventional expectations of fine dining. It's a place where the air buzzes with energy, the music roars, and the plates arrive thick and fast. This is not your typical Michelin-starred establishment, where the atmosphere is sedate and the menu is a symphony of subtle flavors. Instead, Trillium is a bold, vibrant, and playful restaurant that challenges the notion that fine dining must be staid and serious. What makes Trillium truly remarkable is its ability to blend high-end cuisine with a lively, informal atmosphere. The restaurant's open kitchen, busy decor, and jolly service create a sense of warmth and welcome that is rarely found in traditional fine dining settings. The menu at Trillium is a testament to the chef's creativity and generosity. Each dish is a burst of flavor, a playful twist on classic ingredients, and a generous portion size that defies the notion that fine dining must be a minimalist affair. From the pudgy, sea salt-topped, flossy white milk loaf buns to the XXL gougère, every dish is a delight for the senses. The food at Trillium is relentlessly spot-on, indulgent, imaginative, and bizarrely generous in portion size. The "coddled duck egg" is a standout dish, with two buttery, beautifully seasoned, runny-yolked eggs on top of honking slabs of sourdough slathered with smoked almond paste and finished with truffle. The "small plates" section of the menu is a testament to the chef's creativity, with dishes like beef carpaccio with pickled shimeji mushrooms, bresaola, and an Oxo cube made from shredded beef cheek. The large plates are equally impressive, with vegetarian brilliance coming in the form of vadouvan-spiced heritage carrots with lentils, coconut, and yoghurt, and a perfectly cooked chunk of Cornish skate served with butter beans and a rich, buttery, sunset-yellow espelette sauce. While the dessert menu may not be the strongest, with a bowl of warm Manjari chocolate mousse, the overall dining experience at Trillium is a triumph. What makes Trillium truly special is its ability to make Michelin-starred food feel accessible and enjoyable. The restaurant's semi-rowdier yet still upmarket stage allows guests to relax, enjoy the food, and have fun. The sommeliers are on hand to guide guests through the extensive wine list, but the staff are also happy to accommodate those who prefer a more casual approach, like ordering an Aperol spritz to go with the bruschetta topped with seaweed jam and anchovy. In my opinion, Trillium is a breath of fresh air in the world of fine dining. It's a place where the boundaries between high-end cuisine and casual dining are blurred, and the result is a truly unique and memorable dining experience. The restaurant's ability to blend high-end cuisine with a lively, informal atmosphere is a testament to the chef's skill and vision. Personally, I think Trillium is a must-visit for anyone looking for a truly special dining experience. It's a place where the food is exceptional, the atmosphere is vibrant, and the service is warm and welcoming. From my perspective, Trillium is a shining example of how fine dining can be both accessible and enjoyable, and it's a place that I will undoubtedly return to time and time again.
